Sweet Chili Coconut-Lime Grilled Chicken Recipe

Ingredients:

For the chicken marinade:

  • 1/2 cup unsweetened coconut milk
  • 1/4 cup sweet chili sauce
  • Juice of 1 lime
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1-1.5 lbs boneless, skinless chicken breasts (or thighs)

For optional Coconut-Lime Cauliflower Rice:

  • 1 medium head of cauliflower, riced
  • 1 tablespoon coconut oil
  • Juice of 1/2 lime
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions:

  • Make the Marinade: In a large bowl or ziplock bag, whisk together the coconut milk, sweet chili sauce, lime juice, salt, and pepper.
  • Marinate the Chicken: Add the chicken to the marinade, ensuring it’s well coated. Refrigerate for at least 30 minutes, or up to several hours for maximum flavor.
  • Preheat the Grill: Preheat your grill to medium-high heat. Clean and oil the grates well.
  • Grill the Chicken: Remove chicken from the marinade and grill for approximately 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  • Rest the Chicken: Allow the chicken to rest for 5 minutes before slicing or serving.
  • Prepare the Cauliflower Rice (Optional): While the chicken is grilling, heat the coconut oil in a large skillet over medium heat. Add the riced cauliflower and cook, stirring occasionally, until tender, about 5-7 minutes. Stir in the lime juice, cilantro, salt, and pepper.
  • Serve: Serve the grilled chicken alongside the coconut lime cauliflower rice, or with your favorite side dishes. Garnish with additional lime wedges and cilantro if desired.

Tips:

  • Adjust the Sweetness and Spice: Customize the amount of sweet chili sauce to match your preferred level of sweetness and heat.
  • Use Chicken Thighs: For extra juicy chicken, use boneless, skinless chicken thighs instead of breasts.
  • No Grill? No Problem! If you don’t have a grill, these can easily be cooked in a skillet over medium-high heat.
  • Coconut-Lime Rice Variations: Add in extra veggies to the rice like bell peppers or peas for a heartier side.
