Yields: 2 servings

Ingredients:

Strawberry-Basil Puree:

  • 1 cup chopped strawberries
  • 6-8 large fresh basil leaves, torn

Cocktail:

  • 4 ounces vodka (or swap for gin if you prefer)
  • 1 ounce fresh lime juice (about 2 limes)
  • 1/2 ounce simple syrup (or adjust to taste)
  • 1 tablespoon fresh grated ginger
  • 10 ounces ginger beer or ginger ale (use a spicier ginger beer for more kick)
  • Ice
  • Fresh basil leaves and strawberries for garnish

Equipment:

  • Muddler
  • Cocktail shaker
  • 2 serving glasses

Instructions

1. Make the Strawberry-Basil Puree:

  • In a medium bowl, combine chopped strawberries and torn basil leaves.
  • Use a muddler or the back of a spoon to gently crush the strawberries and basil, releasing their juices and flavors.
  • Store in the refrigerator for at least 30 minutes (or up to 2 days) for optimal flavor.

2. Assemble the Cocktails:

  • Fill your cocktail shaker with ice.
  • Add vodka, lime juice, simple syrup, grated ginger, and 3/4 cup of the strawberry-basil puree.
  • Shake vigorously for 15-20 seconds until well chilled.
  • Fill two serving glasses with ice.
  • Strain the cocktail mixture evenly into the glasses.
  • Top each glass with ginger beer or ginger ale.

3. Garnish and Serve:

  • Garnish with fresh basil leaves and sliced strawberries.
  • Enjoy immediately!

Tips:

  • Adjust Sweetness: Taste the cocktail before adding ginger beer and add more simple syrup if needed.
  • Spice It Up: For a spicier cocktail, use a higher-quality ginger beer with a stronger ginger flavor.
  • Make-Ahead: The strawberry-basil puree can be prepared several days in advance for convenience.
  • Non-Alcoholic Option: Substitute the vodka or gin with sparkling water or club soda for a delightful mocktail.
