Sesame Chicken Fried Rice – Healthy Copycat Recipe

Ingredients:

For the Chicken:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon cornstarch
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1 tablespoon high-heat cooking oil (avocado or grapeseed oil are good options)

For the Fried Rice:

  • 3 cups cooked rice (preferably day-old brown rice or white rice)
  • 1 tablespoon high-heat cooking oil
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 1 cup frozen peas and carrots mix
  • 2 large eggs, beaten
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil

For the Sesame Sauce:

  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey (or maple syrup)
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • 1/2 teaspoon ground ginger
  • Pinch of red pepper flakes (optional)

Garnish:

  • Toasted sesame seeds
  • Sliced green onions

Instructions:

  • Marinate the Chicken: In a bowl, combine chicken, cornstarch, soy sauce, ground ginger, and black pepper. Let marinate for at least 15 minutes.
  • Make the Sesame Sauce: Whisk together soy sauce, rice vinegar, honey, sesame oil, cornstarch, ground ginger, and red pepper flakes (if using). Set aside.
  • Cook the Chicken: Heat oil in a wok or large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through (about 5-7 minutes). Remove chicken from the skillet and set aside.
  • Cook the Vegetables: Add the remaining tablespoon of oil to the same skillet. Add onion and cook until softened, then add garlic and cook for an additional minute. Stir in the frozen peas and carrots and cook until heated through.
  • Make the Fried Rice: Push the vegetables to one side of the skillet. Add the beaten eggs to the other side and scramble. Once the eggs are set, combine them with the vegetables. Add the cooked rice and soy sauce, stir-frying until the rice is heated through and evenly coated.
  • Combine and Finish: Return the cooked chicken to the skillet. Pour the sesame sauce over the fried rice and chicken. Stir-fry until sauce thickens and everything is well combined (about 1-2 minutes).
  • Serve: Drizzle with sesame oil, garnish with sesame seeds and chopped green onions, and enjoy immediately!

Tips:

  • Adjust spice: If you like it spicier, add more red pepper flakes to the sauce.
  • Additional veggies: Mix in other vegetables like broccoli, bell peppers, or chopped kale for an even healthier boost.
  • No wok? No problem: A large skillet works just as well for this recipe.
