Mini Mediterranean Turkey Meatloaves Recipe

Ingredients

For the meatloaves

  • 1 pound ground turkey (93% lean or higher)

Instructions

1. Preheat oven: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.

2. Combine meatloaf ingredients: In a large bowl, combine the ground turkey, breadcrumbs, feta cheese, parsley, kalamata olives, red onion, egg, olive oil, oregano, garlic powder, salt, and pepper. Mix gently with your hands until just combined (avoid overmixing).

3. Shape the meatloaves: Divide the mixture into four equal portions. Shape each portion into a mini loaf and place them on the prepared baking sheet.

4. Bake: Bake the mini meatloaves in the preheated oven for 20-25 minutes, or until cooked through and the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius).

5. Prepare the topping (optional): While the meatloaves are baking, prepare the topping by combining chopped cucumber, tomato, dill, lemon juice, olive oil, salt, and pepper in a small bowl.

6. Serve: Once cooked, let the meatloaves rest for a few minutes before serving. Top each meatloaf with the cucumber-tomato mixture and enjoy!
