- 12 slices prosciutto (look for thicker slices for easier handling)

Instructions
Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, and a pinch of black pepper. Set aside.
Prepare the spread: In another small bowl, mix the softened goat cheese until creamy. If it’s very firm, a splash of the dressing can help loosen it.
Assemble the roll-ups:
- Lay out a prosciutto slice. Spread a thin layer of goat cheese on the wider half of the slice.
- Top the goat cheese with a teaspoon or so of fig preserves.
- If using fresh figs, add one or two thin slices on top of the fig preserves.
- Place a few arugula leaves (or greens of choice) on top.
- Drizzle lightly with some of the lemon dressing.
- Season with freshly cracked black pepper.
- Starting from the wider end, carefully roll up the prosciutto, enclosing the fillings.
- Repeat with the remaining prosciutto slices and ingredients.
Chill and serve:
- Refrigerate the roll-ups for at least 30 minutes to help them firm up and for the flavors to blend.
- To serve, cut the roll-ups in half if desired. Arrange on a serving platter.
- If desired, drizzle with a touch of balsamic glaze and garnish with fresh herbs.

- Handling prosciutto: If the prosciutto seems very delicate, chill it slightly before working with it.
