Summer Chicken Wraps Recipe

Ingredients

Chicken

  • 2 boneless, skinless chicken breasts (approximately 1 pound)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika

Wraps

  • 4 large flour tortillas (whole wheat or spinach tortillas are great options too)

Fresh Fillings

  • 1 cup shredded romaine lettuce
  • 1 large ripe tomato, sliced
  • 1/2 cup sliced cucumber
  • 1/2 avocado, sliced
  • 1/4 cup crumbled feta cheese (optional)

Dressing

  • 1/4 cup plain Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

1. Prepare the chicken

  • Pound the chicken breasts to an even thickness (around 1/2 inch).
  • In a small bowl, combine olive oil, salt, pepper, garlic powder, onion powder, and paprika. Rub the spice mixture over the chicken breasts.
  • Heat a large skillet or grill pan over medium-high heat. Add the chicken and cook for 5-7 minutes per side, or until cooked through and the internal temperature reaches 165°F (74°C).
  • Remove the chicken from the pan, let it rest for 5 minutes, then slice it into thin strips.

2. Make the dressing

  • Whisk together the Greek yogurt, lemon juice, dill, salt, and pepper in a small bowl.

3. Warm the tortillas

  • Warm tortillas in the microwave for 10-15 seconds or in a dry skillet to make them more pliable and easier to roll.

4. Assemble the wraps

  • Lay out a tortilla and spread a thin layer of the yogurt dressing on it.
  • Top with shredded lettuce, tomato slices, cucumber slices, avocado, chicken strips, and feta cheese (if using).
  • Carefully roll the tortilla, folding in the sides as you go, and secure with a toothpick if needed.

Tips

Customize it: Add your favorite summer vegetables like bell peppers, corn kernels, or chopped red onion.

Spice it up: For a kick, add a pinch of red pepper flakes or chili powder to the chicken seasoning.

Alternative dressing ideas: Try hummus, ranch dressing, or a pesto-based dressing.
