Ingredients
- 8 ounces feta cheese: Choose a good quality block of feta, drained if packed in brine.
- 3/4 cup Greek yogurt: Full-fat yogurt gives the best texture. You can substitute with sour cream for a tangier flavor.
- 2 tablespoons extra virgin olive oil: Plus extra for drizzling.
- 1 tablespoon lemon juice: Freshly squeezed is best.
- 1 small garlic clove, minced: Or adjust to your taste.
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried dill
- Pinch of salt and black pepper
- Optional garnishes: Chopped fresh herbs (parsley, mint, dill), Aleppo pepper or red pepper flakes, toasted pine nuts, olives.
Instructions
1. Combine ingredients: In a food processor, combine the feta cheese, Greek yogurt, olive oil, lemon juice, garlic, oregano, dill, salt, and pepper.
2. Whip until smooth: Process until light, fluffy, and very smooth. This may take a minute or two. Scrape down the sides of the processor bowl as needed.
3. Taste and adjust: Give the dip a taste. Adjust salt, pepper, lemon juice, or herbs if needed.
4. Transfer and garnish: Scoop the whipped feta dip into a serving bowl. Create a slight well in the center, and drizzle with additional olive oil. Garnish with your choice of chopped herbs, pepper flakes, pine nuts, or olives.
5. Serve: Enjoy immediately with warm pita bread, toasted baguette slices, and/or fresh cut vegetables like cucumbers, carrots, and bell peppers.
Tips
Feta quality: Using a good quality feta gives the best flavor to your dip.
Flavor variations: Experiment with roasted red peppers blended in, a drizzle of hot honey for spice, chopped sun-dried tomatoes, or a sprinkle of za’atar spice.
Make it ahead: Whipped feta can be made a day or two in advance. Store chilled, and give it a quick stir before serving.
