Watermelon Feta Salad Recipe

Ingredients:

  • Watermelon: 5-6 cups of cubed seedless watermelon (about half a medium watermelon)
  • Cucumber: 1 medium cucumber, sliced or diced
  • Feta Cheese: 1/2 cup crumbled feta cheese
  • Fresh Herbs: 1/4 cup fresh mint leaves, chopped + 1/4 cup fresh basil leaves, chopped
  • Red Onion: 1/4 cup thinly sliced red onion
  • Balsamic Glaze: 2-3 tablespoons balsamic glaze (optional, but delicious)

Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon honey (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  • Prepare the Watermelon and Veggies: Cut the watermelon into bite-sized cubes. Slice or dice the cucumber. Thinly slice the red onion.
  • Make the Dressing: Whisk together olive oil, lime juice, honey (if using), salt, and pepper in a small bowl.
  • Combine Salad Ingredients: In a large salad bowl, combine the watermelon, cucumber, red onion, feta cheese, mint, and basil. Gently toss to combine.
  • Dress the Salad: Drizzle the prepared dressing over the salad and toss gently to coat everything evenly.
  • Finishing Touches: Drizzle with a bit of balsamic glaze (optional) for a sweet and tangy touch. Season with additional salt and pepper to taste.
  • Chill and Serve: For best flavor, chill the salad for at least 30 minutes before serving.
