Thai Peanut Chicken Quinoa Bowls Recipe

Ingredients:

For the chicken:

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

For the peanut sauce:

  • 1/3 cup creamy peanut butter
  • 1/4 cup low-sodium soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon fresh lime juice
  • 1 tablespoon grated fresh ginger
  • 1-2 cloves garlic, minced
  • 1 teaspoon Sriracha sauce (more or less to taste)

For the quinoa bowls:

  • 1 cup quinoa, rinsed
  • 1 3/4 cups chicken broth or vegetable broth
  • 1 cup broccoli florets
  • 1 cup shredded carrots
  • 1/2 cup bell pepper, sliced
  • 1/4 cup green onions, sliced
  • Fresh cilantro, for garnish
  • Chopped peanuts, for garnish

Instructions:

Cook the quinoa:

  • In a medium saucepan, combine quinoa and broth.
  • Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for about 15 minutes, or until liquid is absorbed and quinoa is fluffy.

Prepare the chicken:

  • While the quinoa cooks, heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper.
  • Add chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Transfer chicken to a plate.

Make the peanut sauce:

  • In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, lime juice, ginger, garlic, and Sriracha until well combined.

Assemble the bowls:

  • Divide cooked quinoa among serving bowls.
  • Top with chicken, broccoli, carrots, bell pepper, and green onions.
  • Drizzle generously with peanut sauce.
  • Garnish with chopped cilantro and peanuts.

  • Make it vegetarian: Substitute the chicken with firm tofu or chickpeas.
