Sweet Potato Toasts Recipe

Ingredients

  • 1-2 large sweet potatoes (depending on desired serving)
  • Olive oil (or your preferred cooking oil)
  • Salt
  • Pepper

Instructions

1. Prep: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Wash and scrub the sweet potatoes thoroughly.

2. Slice: Cut off the ends of the sweet potato. Slice the potatoes lengthwise into slices approximately ¼ – ½ inch thick. For even toasting, try using a mandoline slicer if you have one.

3. Season and Bake: Spread the sweet potato slices on a baking sheet lined with parchment paper. Drizzle with a little olive oil, and season with salt and pepper. Bake for 15-20 minutes per side, or until tender and lightly browned. Flip the slices halfway through baking.

4. Toast (optional): If you want a bit more crispiness, pop the baked slices into your toaster for a couple of minutes. Watch carefully to avoid burning!

Topping Variations

The fun part is experimenting with all your favorite toppings! Here are a few ideas:

  • Savory Delight: Smashed avocado, a fried or poached egg, a sprinkle of feta or goat cheese, and a dash of hot sauce.
  • Nutty and Nice: Almond butter or peanut butter, sliced banana, a drizzle of honey, and a sprinkle of cinnamon.
  • Creamy and Fruity: Ricotta cheese, fresh berries, and a drizzle of honey or maple syrup.
  • Mediterranean Flair: Hummus, crumbled feta cheese, sliced cucumbers, and a sprinkle of olives.

Important Tips

Sweet potato size matters: Choose the largest, most uniformly shaped sweet potatoes for the best slices.

Slice thickness is key: Too thin, and they’ll burn; too thick and they won’t cook through properly.

Don’t overcrowd: Give the slices space on the baking sheet for even cooking.

Adjust bake time: Baking times can vary slightly depending on the thickness of your slices and your oven.
