Ingredients:
For the chicken marinade:
- 1/2 cup unsweetened coconut milk
- 1/4 cup sweet chili sauce
- Juice of 1 lime

- 1-1.5 lbs boneless, skinless chicken breasts (or thighs)
For optional Coconut-Lime Cauliflower Rice:
- 1 medium head of cauliflower, riced
- 1 tablespoon coconut oil
- Juice of 1/2 lime
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions:
- Make the Marinade: In a large bowl or ziplock bag, whisk together the coconut milk, sweet chili sauce, lime juice, salt, and pepper.
- Marinate the Chicken: Add the chicken to the marinade, ensuring it’s well coated. Refrigerate for at least 30 minutes, or up to several hours for maximum flavor.
- Preheat the Grill: Preheat your grill to medium-high heat. Clean and oil the grates well.
- Grill the Chicken: Remove chicken from the marinade and grill for approximately 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
- Rest the Chicken: Allow the chicken to rest for 5 minutes before slicing or serving.
- Prepare the Cauliflower Rice (Optional): While the chicken is grilling, heat the coconut oil in a large skillet over medium heat. Add the riced cauliflower and cook, stirring occasionally, until tender, about 5-7 minutes. Stir in the lime juice, cilantro, salt, and pepper.
- Serve: Serve the grilled chicken alongside the coconut lime cauliflower rice, or with your favorite side dishes. Garnish with additional lime wedges and cilantro if desired.
