S’mores Brownies Recipe

Option 1: Easy S’mores Brownies (using boxed brownie mix)

Ingredients:

  • 1 box (16 oz) brownie mix (fudge or original flavor)
  • Water, vegetable oil, and egg (quantities will depend on the specific brownie mix instructions)
  • 2 cups miniature marshmallows
  • 8 graham cracker squares, broken into small pieces
  • 2 Hershey’s milk chocolate bars (1.55 oz each), broken into 1-inch squares

Instructions:

  • Preheat your oven to the temperature specified on the brownie mix box. Grease a 9×13 inch baking dish.
  • Prepare the brownie batter according to the box instructions, using the water, vegetable oil, and egg called for. Pour the batter into the prepared baking dish.
  • While the brownies bake (around 15 minutes), prepare the topping. In a bowl, combine the marshmallows, graham cracker pieces, and chopped chocolate.
  • Remove the brownies from the oven and sprinkle the topping mixture evenly over the top.
  • Return the brownies to the oven and bake for an additional 7-10 minutes, or until a toothpick inserted near the center comes out clean.
  • Let the brownies cool completely before cutting and serving.

Option 2: Homemade S’mores Brownies

Ingredients:

Brownies:

  • ½ cup unsalted butter
  • 1 ¼ cups granulated sugar
  • ¾ cups + 2 tablespoons unsweetened cocoa powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ½ cup all-purpose flour
  • 1 cup milk chocolate chips
  • ½ cup marshmallow fluff
  • Marshmallow Topping:
  • 1 cup mini marshmallows

Instructions:

  • Preheat your oven to 325°F (163°C). Line an 8×8 inch baking pan with parchment paper, leaving overhang on the sides for easy removal.

Brownie Layer:

  • In a large microwave-safe bowl, combine butter and sugar.
  • Heat on high power for about 45 seconds, stirring halfway through, until the butter is melted and the mixture is combined. Watch closely to avoid burning the butter.
  • Add the cocoa powder, salt, and vanilla extract to the hot butter mixture. Stir until smooth and well combined. The batter will be very dark and granular at this point.
  • In a separate bowl, whisk together the eggs. Add the eggs to the brownie batter one at a time, whisking vigorously after each addition until fully incorporated.
  • Stir in the flour until just combined. Don’t overmix!
  • Fold in the milk chocolate chips and marshmallow fluff.
  • Pour the batter into the prepared baking pan.

Marshmallow Topping:

  • Sprinkle the top of the batter evenly with mini marshmallows.
  • Bake for 25-30 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs. The brownies should be fudgy in the center and the marshmallows should be golden brown on top.
  • Let the brownies cool completely in the pan before cutting and serving.

Tips:

  • For a richer chocolate flavor, use dark chocolate instead of milk chocolate.
  • If you don’t have marshmallow fluff, you can use Nutella or another chocolate hazelnut spread.
  • To add a graham cracker crust, press a layer of crushed graham crackers into the bottom of the pan before pouring in the brownie batter.
  • Let the brownies cool completely before cutting to ensure the marshmallows set properly and for cleaner cuts.
