Sheet Pan Sausage and Peppers Recipe

Ingredients

  • 1 pound Italian sausage (sweet, mild, or hot, choose your favorite)
  • 2 bell peppers (any colors: red, yellow, orange) cut into 1-inch strips
  • 1 large onion (yellow or white), cut into 1-inch strips
  • 3 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 teaspoon red pepper flakes (for a little heat)

Instructions

1. Preheat oven: Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper for easy cleanup.

2. Prep the veggies: Slice the bell peppers and onion into strips.

3. Combine ingredients: In a large bowl, combine the sausage, bell peppers, onion, olive oil, Italian seasoning, garlic powder, salt, pepper, and optional red pepper flakes. Toss everything together until everything is well coated.

4. Spread on baking sheet: Arrange the sausage mixture in a single layer on the prepared baking sheet. Make sure there’s some space between the sausage pieces for even cooking.

5. Roast: Roast in the preheated oven for 25-30 minutes, or until the sausage is cooked through (internal temperature of 160°F) and the vegetables are tender and lightly browned. Toss the mixture halfway through cooking for even browning.

6. Optional: Broil: If you want a little extra char and caramelization, switch the oven to broil and broil for 1-2 minutes, keeping a close eye to avoid burning.

7. Serve and enjoy: Serve immediately with your favorite sides, like crusty bread, rice, or mashed potatoes. You can also garnish with fresh herbs like basil or parsley if desired.

Tips

Customize it: Add other vegetables like zucchini, mushrooms, or potatoes.

Make it spicy: Use hot Italian sausage or add more red pepper flakes for extra heat.

Make it ahead: Prep the ingredients in advance and store them in the refrigerator. Assemble and roast right before serving.
