Ruby Tuesday Chicken Fajitas Recipe

Ingredients:

Marinade:

  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 2 tablespoons fajita seasoning (store-bought or homemade – see note below)
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Fajitas:

  • 1.5 lbs boneless, skinless chicken breasts, sliced into thin strips
  • 1 large green bell pepper, sliced
  • 1 large red bell pepper, sliced
  • 1 large yellow or white onion, sliced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Toppings (optional):

  • Flour tortillas
  • Sour cream
  • Guacamole
  • Shredded cheddar cheese
  • Pico de gallo

Homemade Fajita Seasoning (if you don’t have store-bought):

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)

Instructions:

  • Make the marinade: Combine all the marinade ingredients in a bowl or ziplock bag.
  • Marinade the chicken: Add the sliced chicken to the marinade and mix well to coat. Let it marinate in the refrigerator for at least 30 minutes, or preferably overnight for maximum flavor.
  • Prepare vegetables: Slice the bell peppers and onion into thin strips.
  • Cook the chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken, working in batches if needed to avoid overcrowding. Cook for 5-7 minutes per side, or until cooked through. Remove chicken and set aside.
  • Cook the vegetables: Add the remaining tablespoon of oil to the skillet. Add the sliced peppers and onions, season with salt and pepper, and cook for about 5-7 minutes, or until softened and slightly charred.
  • Combine everything: Return the cooked chicken to the skillet with the peppers and onions. Toss to combine and heat through.
  • Serve: Warm flour tortillas and let everyone assemble their own fajitas with the chicken and vegetable mixture, along with their favorite toppings.

Tips:

  • Spice level: Adjust chili powder and cayenne pepper in the seasoning mix for your preferred heat level.
  • Even cooking: Slice chicken and vegetables into similar-sized strips for even cooking.
  • Get sizzling: Heat your skillet or pan until very hot for that classic fajita sear and sizzle.
