Ingredients:
Marinade:
- 1/4 cup olive oil
- 1/4 cup lime juice
- 2 tablespoons fajita seasoning (store-bought or homemade – see note below)
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Fajitas:
- 1.5 lbs boneless, skinless chicken breasts, sliced into thin strips
- 1 large green bell pepper, sliced
- 1 large red bell pepper, sliced
- 1 large yellow or white onion, sliced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Toppings (optional):
- Flour tortillas
- Sour cream
- Guacamole
- Shredded cheddar cheese
- Pico de gallo
Homemade Fajita Seasoning (if you don’t have store-bought):
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
Instructions:
- Make the marinade: Combine all the marinade ingredients in a bowl or ziplock bag.
- Marinade the chicken: Add the sliced chicken to the marinade and mix well to coat. Let it marinate in the refrigerator for at least 30 minutes, or preferably overnight for maximum flavor.
- Prepare vegetables: Slice the bell peppers and onion into thin strips.
- Cook the chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken, working in batches if needed to avoid overcrowding. Cook for 5-7 minutes per side, or until cooked through. Remove chicken and set aside.
- Cook the vegetables: Add the remaining tablespoon of oil to the skillet. Add the sliced peppers and onions, season with salt and pepper, and cook for about 5-7 minutes, or until softened and slightly charred.
- Combine everything: Return the cooked chicken to the skillet with the peppers and onions. Toss to combine and heat through.
- Serve: Warm flour tortillas and let everyone assemble their own fajitas with the chicken and vegetable mixture, along with their favorite toppings.
