Potato Chip Chicken Fingers Recipe

Ingredients

  • 1 1/4 pounds boneless, skinless chicken breasts or tenders: Choose whichever is easily available.
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional): For a little kick of heat.
  • 2 large eggs
  • 8 ounces potato chips (your favorite flavor): Aim for around 2 to 3 cups when crushed.

Equipment and Utensils

  • Baking sheet
  • Parchment paper or foil
  • Wire rack (optional, but recommended)
  • Meat mallet or rolling pin
  • 3 shallow bowls or dishes

Instructions

1. Prep and Preheat

  • Preheat your oven to 400 degrees F (200 degrees C).
  • Line a baking sheet with parchment paper or foil.
  • For crispier chicken, place a wire rack over the baking sheet.

2. Crush the Chips

  • Place potato chips in a ziplock bag or between sheets of parchment.
  • Crush them using a meat mallet or rolling pin.
  • Aim for a mix of fine crumbs and coarser pieces to add texture.

3. Set Up Breading Stations

  • Bowl 1: Combine flour, salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper (if using).
  • Bowl 2: Whisk the eggs until well combined.
  • Bowl 3: Place the crushed potato chips.

4. Cut the Chicken

  • Trim any excess fat from the chicken breasts.
  • Cut them into either finger-sized strips or bite-sized pieces.

5. Bread the Chicken

  • Working with a few pieces at a time, dredge the chicken in the flour mixture, shaking off excess.
  • Dip in the whisked egg, letting excess drip off.
  • Thoroughly coat with potato chip crumbs, pressing to help them stick.

6. Bake

  • Arrange the coated chicken on the baking sheet (and wire rack, if using). Avoid overcrowding.
  • For extra crispy results, lightly spray the chicken with cooking spray.
  • Bake for 18-22 minutes, or until cooked through and golden brown. Flip halfway for even cooking.

Tips

Serving Options: Serve with your favorite dipping sauce (honey mustard, BBQ sauce, ranch, etc.)

Flavor Variations: Try using different flavored chips (BBQ, sour cream & onion, etc.) for extra flavor.

Make-Ahead: Prep the chicken fingers ahead of time and store the breaded chicken in the refrigerator until ready to bake.
