Instructions
1. Prep and Preheat
- Preheat your oven to 400 degrees F (200 degrees C).

2. Crush the Chips
- Place potato chips in a ziplock bag or between sheets of parchment.
- Crush them using a meat mallet or rolling pin.
- Aim for a mix of fine crumbs and coarser pieces to add texture.
3. Set Up Breading Stations
- Bowl 1: Combine flour, salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper (if using).
- Bowl 2: Whisk the eggs until well combined.
- Bowl 3: Place the crushed potato chips.
4. Cut the Chicken
- Trim any excess fat from the chicken breasts.
- Cut them into either finger-sized strips or bite-sized pieces.
5. Bread the Chicken
- Working with a few pieces at a time, dredge the chicken in the flour mixture, shaking off excess.
- Dip in the whisked egg, letting excess drip off.
- Thoroughly coat with potato chip crumbs, pressing to help them stick.
6. Bake
- Arrange the coated chicken on the baking sheet (and wire rack, if using). Avoid overcrowding.

- Bake for 18-22 minutes, or until cooked through and golden brown. Flip halfway for even cooking.
