Mushroom and Zucchini Shrimp Pasta Recipe

Ingredients:

Pasta: 12 ounces of your favorite pasta (spaghetti, linguine, penne, or fettuccine all work well)

Protein: 1 pound large shrimp, peeled and deveined

Vegetables:

  • 8 ounces sliced mushrooms (white button or cremini)
  • 1 medium zucchini, spiralized or cut into half-moons
  • 1/2 small onion, chopped
  • 3 cloves garlic, minced

Sauce:

  • 1/4 cup unsalted butter
  • 1 tablespoon olive oil
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Optional Garnishes: Fresh chopped parsley, additional Parmesan cheese, red pepper flakes

Instructions:

  • Prep the Ingredients: Spiralize the zucchini or cut into half-moons. Mince the garlic, chop the onion, and slice the mushrooms.
  • Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  • Cook the Shrimp: Season shrimp with salt and pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from the skillet and set aside.
  • Sauté the Vegetables: Add the butter to the same skillet. Once melted, add the onions and cook for 2-3 minutes until softened. Add the mushrooms and cook for an additional 5 minutes until tender. Stir in the garlic and cook for 30 seconds more, until fragrant.
  • Make the Sauce: Pour in the chicken broth and heavy cream. Bring to a simmer and cook for 2-3 minutes, or until the sauce slightly thickens. Stir in the parmesan cheese until melted.
  • Assemble the Dish: Add the cooked pasta, zucchini, and shrimp to the sauce. Toss to combine, adding some reserved pasta water if the sauce seems too thick. Season with salt and pepper to taste.
  • Serve: Garnish with chopped parsley, extra Parmesan, and red pepper flakes (if desired). Enjoy immediately!

Tips:

  • Zoodles: If you want a lower-carb version, substitute the pasta with zucchini noodles.
  • Spice it up: Add a pinch of red pepper flakes for a touch of heat.
  • Fresh herbs: Other fresh herbs like basil or thyme would also be delicious additions.
