Mojito Fruit Salad Recipe

Ingredients:

Fruit:

  • 4 cups cubed watermelon (seedless)
  • 1 cup strawberries, hulled and quartered
  • 1 cup blueberries
  • 1 cup green grapes
  • 1/2 cup raspberries (optional, for extra sweetness)

Mojito Dressing:

  • 1/4 cup fresh lime juice (about 2-3 limes)
  • 1/4 cup chopped fresh mint leaves
  • 2-3 tablespoons honey (adjust for sweetness)
  • 1 tablespoon white rum (optional, for an extra authentic touch)

Instructions:

Prep the Fruit:

  • Wash and prepare all the fruit.
  • Cube the watermelon, quarter the strawberries, and leave the blueberries and grapes whole.

Make the Dressing:

  • In a small bowl, combine the lime juice, chopped mint, and honey. Whisk until well blended.
  • Muddle the mint slightly with the back of a spoon to release its flavors.
  • If using, stir in the rum.

Combine:

  • In a large salad bowl, gently toss together all the fruits.
  • Pour the mojito dressing over the top.
  • Toss lightly to coat everything evenly.

Chill and Serve:

  • Refrigerate the salad for at least 30 minutes to allow the flavors to meld and the juices to release.
  • Serve chilled.

Tips:

  • Get creative with your fruit: Feel free to add pineapple chunks, mango, or other fruits that fit the tropical theme.
  • Adjust the sweetness: Taste the dressing before adding it to the fruit and adjust the honey level to your preference.
  • Make ahead: This salad is great made a few hours ahead of time. The flavors develop beautifully as it sits. Give it a gentle stir before serving.
  • Garnish: Add a few extra mint sprigs and lime wedges for garnish just before serving.
