Ingredients
For the Burgers
- 1 lb ground lamb
- 1/2 cup breadcrumbs (gluten-free if needed)
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh mint
- 2 tablespoons chopped fresh parsley
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Bruschetta Topping
- 2 ripe Roma tomatoes, chopped
- 1/4 cup chopped fresh basil
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic, minced
- Salt and pepper to taste

- 4 burger buns (brioche buns are delicious!)
- Optional toppings: Sliced red onion, arugula, tzatziki sauce
Instructions
1. Make the Bruschetta
- Combine ingredients: In a medium bowl, combine chopped tomatoes, basil, olive oil, balsamic vinegar, garlic, salt and pepper. Mix well.
- Chill: Cover and refrigerate for at least 30 minutes to allow flavors to meld.
2. Make the Lamb Burgers
- Combine burger mixture: In a large bowl, gently combine ground lamb, breadcrumbs, feta, mint, parsley, olive oil, oregano, salt, and pepper. Don’t overwork the meat, or the burgers will be tough.
- Form patties: Divide the mixture into four equal patties, slightly larger than your buns.
- Create an indentation: Make a shallow indentation in the center of each patty. This helps them cook evenly and prevents them from puffing up.
3. Cook the Burgers
- Preheat grill or pan: Preheat a grill or large skillet over medium-high heat.
- Cook patties: Grill or cook the patties for 4-5 minutes per side for medium-rare, or longer for your desired doneness.
- Rest: Let the burgers rest for a few minutes before serving. This allows the juices to redistribute.
4. Assemble the Burgers
- Toast buns: Lightly toast the burger buns.
- Assemble: Place a cooked burger on the bottom bun. Top with a generous spoonful of bruschetta. Add your favorite toppings, like red onion or arugula. Drizzle with tzatziki sauce if desired. Finish with the top bun.
