Homemade Maple Almond Granola Recipe

Ingredients:

  • 3 cups rolled oats (old-fashioned oats provide the best texture)
  • 1 cup raw almonds (chopped, sliced, or slivered)
  • 1/2 cup unsweetened coconut flakes (optional, for extra flavor/texture)
  • 1/4 cup pumpkin seeds (optional, for a nutritional boost)
  • 1/4 cup sunflower seeds (optional, for a nutritional boost)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup pure maple syrup
  • 1/4 cup melted coconut oil
  • 1 tablespoon honey
  • 1 teaspoon pure vanilla extract
  • 1/2 cup dried cranberries or other dried fruit (optional, add after baking)

Instructions

  • Preheat oven: Preheat your oven to 325°F (165°C). Line a large rimmed baking sheet with parchment paper.
  • Combine dry ingredients: In a large bowl, combine the oats, almonds, coconut flakes (if using), pumpkin seeds (if using), sunflower seeds (if using), cinnamon, and salt.
  • Prepare wet ingredients: In a small saucepan, melt the coconut oil over low heat. Once melted, add the maple syrup, honey, and vanilla extract. Stir until well combined.
  • Mix everything: Pour the wet ingredients over the dry ingredients and mix thoroughly until all of the oats and nuts are evenly coated.
  • Bake: Spread the granola mixture onto the prepared baking sheet in an even layer. Bake for 20-25 minutes, stirring halfway through the baking time to ensure even browning.
  • Cool and add dried fruit: Remove the granola from the oven and let it cool completely on the baking sheet. This is when the granola will crisp up. Once cooled, stir in the dried cranberries or your preferred dried fruit (if using).
  • Store: Store the granola in an airtight container at room temperature for up to 2 weeks.

Tips:

  • Customize it: Add other nuts like walnuts or pecans. Include dried fruits like cherries, blueberries, or chopped dates.
  • Make it chunky: For granola clusters, press the mixture firmly onto the baking sheet before baking. After it cools, break it apart into chunks.
  • Double the batch: This recipe is easy to double and perfect for meal prep or gifting!
