Grilled Caprese Chicken Recipe

Ingredients:

Chicken:

  • 4 boneless, skinless chicken breasts (approximately 6 ounces each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and freshly ground black pepper to taste

Caprese Topping

  • 1 large tomato, sliced
  • 8 ounces fresh mozzarella, sliced (buffalo mozzarella recommended for its flavor)
  • 1/4 cup fresh basil leaves, roughly chopped

Balsamic Glaze:

  • 1/2 cup balsamic vinegar
  • 1 tablespoon honey (optional)

Equipment:

  • Grill (gas or charcoal)
  • Grill tongs
  • Small saucepan

Instructions:

  • Marinade: In a shallow dish or zip-top bag, whisk olive oil, Italian seasoning, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and turn to coat well. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator for maximum flavor.
  • Prepare the grill: Preheat your grill to medium-high heat (around 400-450°F). Clean and lightly oil the grill grates.
  • Make the balsamic glaze: While the grill is heating, combine balsamic vinegar and optional honey in a small saucepan over medium heat. Bring to a simmer, then reduce heat and simmer for about 10-15 minutes, stirring occasionally, until the glaze has thickened and reduced by about half. Set aside.
  • Grill the chicken: Remove chicken from marinade and place on the hot grill. Grill for 5-7 minutes per side, or until cooked through and the internal temperature registers 165°F on a meat thermometer.
  • Melt the cheese: In the last 1-2 minutes of grilling, place a slice of mozzarella on top of each chicken breast. Close the grill lid and let the cheese melt.
  • Assemble: Remove the chicken breasts from the grill. Top each chicken breast with a tomato slice and sprinkle with chopped basil.
  • Drizzle and Serve: Drizzle balsamic glaze over the chicken, tomatoes, and mozzarella. Serve immediately.

  • Chicken thickness: If your chicken breasts are thick, pound them to an even thickness for faster and more even cooking.
  • Grill marks: For those perfect crosshatch grill marks, rotate the chicken 45 degrees halfway through cooking on each side.
  • Freshness: Use the freshest ingredients you can find, especially ripe tomatoes and good quality mozzarella.
  • Customization: Add other herbs like oregano or thyme to the marinade, or use a store-bought quality balsamic glaze if you’re short on time.
