Gluten Free Chicken Fingers Recipe

Ingredients:

  • 1 pound boneless, skinless chicken breasts or tenders
  • 1/2 cup gluten-free all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 cup gluten-free Panko-style breadcrumbs
  • Cooking oil or cooking spray (for frying or air frying)

Instructions (Baked):

  • Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Cut Chicken: Slice chicken breasts into strips or use pre-cut chicken tenders.
  • Prepare Stations: In three separate shallow bowls or dishes:
  • Bowl 1: Combine gluten-free flour, paprika, garlic powder, onion powder, salt, and pepper.
  • Bowl 2: Whisk the eggs.
  • Bowl 3: Place the gluten-free breadcrumbs.
  • Coat the Chicken: Dip each chicken strip into the flour mixture, then the egg, and finally the breadcrumbs, pressing the crumbs on to adhere.
  • Bake: Arrange the coated chicken fingers on the baking sheet. Lightly spray with cooking oil (optional). Bake for 15-20 minutes, or until cooked through and golden brown.

Instructions (Air Fryer):

  • Preheat Air Fryer: Preheat your air fryer to 400°F (200°C)
  • Prepare Chicken: Follow steps 2-4 from the baked instructions above for cutting and coating the chicken fingers.
  • Air Fry: Arrange the chicken fingers in a single layer in the air fryer basket. Lightly spray with cooking oil. Air fry for 8-12 minutes, flipping halfway through, until cooked through and golden brown. You may need to work in batches depending on your air fryer size.

Tips:

  • Marinade Option: For extra flavor, marinate the chicken in buttermilk with a splash of hot sauce for at least an hour before coating.
  • Gluten-Free Breadcrumb Alternatives: Crushed gluten-free crackers, cornflakes, or almond flour can be used instead of breadcrumbs.
