Yields: About 10-12 servings
Prep Time: 10 minutes
Set Time: 30 minutes
Ingredients:
- 12 cups popped popcorn (~1/3 cup kernels)
- 2 cups gluten-free pretzel sticks or twists (check the label!)
- 1 – 1 ½ cups peanuts (salted or unsalted, your choice)
- 16 oz bag gluten-free white chocolate chips or candy melts
- 1 tablespoon vegetable or coconut oil (helps make the chocolate smoother)
- 1 cup M&Ms (regular or seasonal Easter colors)
- ½ cup gluten-free sprinkles (long “jimmies” or pastel nonpareils work well)
- Optional: Coarse sea salt for a sweet-and-salty kick
Equipment:
- Large mixing bowl
- 2 large baking sheets
- Parchment paper
- Microwave-safe bowl
Instructions:
- Prep your space: Line baking sheets with parchment paper. This will help prevent sticking.
- Make the popcorn: If you’re not using pre-popped, air-pop about 1/3 cup of kernels for 12 cups of popcorn. Remove any unpopped kernels.
- Create the mix: In the large mixing bowl, combine the popcorn, gluten-free pretzels, and peanuts.
- Melt the chocolate: In the microwave-safe bowl, combine the white chocolate chips and the oil. Microwave in 30-second intervals, stirring in between, until the mixture is melted and smooth.
- Coat everything: Drizzle the melted chocolate over the popcorn mixture. Use a large spoon or spatula to gently toss to coat everything thoroughly.
- Add goodies: While the chocolate is still warm, stir in the M&Ms and sprinkles. Don’t be afraid to get creative here!
- Set it up: Spread the mixture evenly onto your prepared baking sheets. Sprinkle with a touch of coarse sea salt if you want a salty counterpoint to the sweetness.
- Let it cool: Allow the Bunny Munch to rest for about 30 minutes, or until the chocolate is fully set.
- Break and enjoy! Break up the Bunny Munch into bite-sized clusters and enjoy. Store in an airtight container at room temperature for a few days of snacking!
Tips:
- Choose your chocolate: White chocolate chips or white candy melts both work. Experiment with fun seasonal flavors if you like!
- Get creative with mix-ins: Try other candies like mini marshmallows, pastel chocolate chips, chopped nuts, or dried fruit.
- Make it a gift: Package this Bunny Munch in cute cellophane bags for an easy Easter treat.
