Fresh Apple Cake Recipe

Ingredients:

Dry Ingredients:

  • 2 cups (250g) all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4teaspoon salt

Wet Ingredients:

  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) milk

Apples:

  • 3 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and diced

Optional Topping:

  • 1/4 cup (50g) brown sugar
  • 1 tablespoon ground cinnamon

Instructions

Prep:

  • Preheat oven to 350°F (175°C).
  • Grease and flour a 9×13 inch baking pan.

Combine dry ingredients:

  • In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

Combine wet ingredients:

  • In a medium bowl, whisk together sugar, melted butter, eggs, and vanilla extract.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  • Stir in the milk until the batter is smooth.

Fold in apples:

  • Gently fold in the diced apples.

Bake:

  • Pour the batter into the prepared pan and spread evenly.
  • If using the optional topping, mix the brown sugar and cinnamon and sprinkle over the top of the batter.
  • Bake for 45-60 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Serve:

  • Let the cake cool in the pan for 10-15 minutes before inverting onto a wire rack to cool completely.
  • Cut into squares and serve with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.

Tips:

  • Apple variety: Choose apples that hold their shape well during baking. Granny Smith and Honeycrisp are excellent choices.
  • Don’t overmix: Overmixing the batter will lead to a tough cake.
  • Check doneness: Baking times can vary, so rely on the toothpick test for doneness.
  • Storage: The cake will stay fresh at room temperature for 2-3 days in an airtight container or in the refrigerator for up to a week.
