Instructions:
Prepare the avocado mash:
- Scoop the avocado flesh into the medium bowl.
- Add salt, pepper, and lime juice. Roughly mash with the fork, leaving it slightly chunky.
- Stir in cilantro (if using) and set aside.
Cook the chorizo:
- Crumble chorizo into the large skillet. Cook over medium heat, stirring occasionally, until browned and cooked through (about 5-7 minutes). Drain off any excess fat.
Toast the bread:
- While the chorizo is cooking, toast your bread to desired doneness.
Fry the eggs:
- Add the olive oil to the skillet with the cooked chorizo.
- Crack eggs directly into the pan, spacing them apart. Season with salt and pepper.
- Cook until the whites are set but yolks are still runny (or to your desired doneness).
Assemble the toasts:
- Spread a generous layer of avocado mash onto each slice of toast.
- Top with the cooked chorizo.
- Carefully place a fried egg on top of each toast.
- Add any desired toppings, like tomatoes, cheese, or hot sauce.

Tips:
- Bread choices: Experiment with different types of bread for varied flavor and texture.
- Spicy kick: Use Mexican chorizo for a spicier flavor profile.
- Egg variations: Instead of fried eggs, try poached or scrambled eggs for different textures.
- Make it ahead: The avocado mash and chorizo can be prepped a day in advance for quicker assembly in the morning.
