Earth Bowl Salads Recipe

Ingredients

Base

  • Greens: Choose your favorites: spinach, kale, arugula, mixed lettuce, romaine, etc.
  • Grains (optional): Cooked quinoa, brown rice, farro, wild rice
  • Legumes (optional): Chickpeas, lentils, black beans, or your favorite

Veggies

  • Roasted: Broccoli, sweet potato, Brussels sprouts, cauliflower, bell peppers, etc.
  • Raw: Cucumber, tomato, shredded carrots, avocado, red onion, corn
  • Other: Olives, kimchi, sauerkraut, pickled veggies

Protein (Optional)

  • Grilled or baked chicken
  • Fish: Salmon, shrimp, tuna, etc.
  • Tofu or tempeh
  • Hard-boiled eggs

Dressing

  • Basil Vinaigrette (recipe included below)
  • Lemon Tahini Dressing
  • Creamy Avocado Dressing
  • Balsamic Vinaigrette
  • Store-bought dressing of your choice

Toppings (Optional)

  • Nuts and Seeds: Almonds, walnuts, pecans, sunflower seeds, pumpkin seeds
  • Dried fruit: Cranberries, raisins
  • Fresh herbs: Cilantro, parsley, basil, mint
  • Cheese: Feta, cheddar, goat cheese, parmesan
  • Sprouts: Sunflower, broccoli, alfalfa, etc.

Instructions

1. Prep Your Components

  • Wash and chop greens.
  • Cook grains or legumes if using.
  • Roast or sauté vegetables.
  • Prep protein (season, grill, bake, etc.).
  • Make your dressing of choice.

2. Assemble the Bowls

  • Start with a base of greens.
  • Add grains or legumes (if using).
  • Layer on a variety of vegetables, both raw and roasted.
  • Include your preferred protein (if using).
  • Drizzle with your choice of dressing.
  • Top with nuts/seeds, dried fruit, herbs, cheese, sprouts, etc.

3. Basil Vinaigrette

  • ½ cup fresh basil leaves
  • 3 tablespoons lemon juice
  • 1 tablespoon honey
  • ½ cup extra virgin olive oil
  • Salt and pepper to taste

To finish the meal:

1. Combine all ingredients in a blender or food processor until smooth.

2. Taste and adjust seasonings.

Be creative! Get inspired by different cuisines (Mexican, Mediterranean, Asian, etc.) to vary your flavors.

Meal prep: Roast a big batch of veggies and prepare grains in advance so you can build quick bowls all week long.
