Del Taco’s Chicken Cheddar Nachos Recipe

Ingredients:

  • Tortilla Chips: A large bag of sturdy restaurant-style tortilla chips.
  • Cooked Chicken: 2 cups shredded cooked chicken (rotisserie chicken works great!)
  • Taco Seasoning: 1 tablespoon store-bought or your favorite homemade blend
  • Cheddar Cheese: About 2 cups freshly shredded cheddar cheese (sharp cheddar provides more flavor)

Optional Toppings:

  • Diced tomatoes
  • Diced red onion
  • Sliced jalapeños
  • Pickled jalapeños
  • Cilantro
  • Del Taco’s secret sauce (recipe below)

Instructions

  • Prep: Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
  • Chip Base: Spread tortilla chips in a single layer on the baking sheet.
  • Chicken Layer: Sprinkle shredded chicken evenly over the chips. Then sprinkle the taco seasoning all over the chicken.
  • Cheese Layer: Generously cover the chicken with the shredded cheddar cheese.
  • Bake: Bake for about 10-15 minutes, or until the cheese is fully melted and bubbly.
  • Top it Off: Remove from the oven and add your desired toppings: diced tomatoes, onions, jalapeños, cilantro.

Del Taco Secret Sauce (Copycat)

Ingredients:

  • 1/2 cup mayonnaise
  • 1/4 cup buttermilk
  • 1 tablespoon white vinegar
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions: Whisk all ingredients together in a bowl until smooth. Store in the refrigerator until ready to use.

Important Tips:

  • Fresh is Best: Freshly shredded cheese melts more smoothly than pre-shredded cheese.
  • Customize It: Add your favorite nacho toppings like black beans, refried beans, sour cream, olives, etc.
  • Even Layers: Try to create even layers for the best distribution of toppings on each chip.
