Crispy Chicken Bacon and Pesto Gnocchi Skillet Recipe

Ingredients

  • 12 ounces bacon, diced
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon homemade seasoned salt (recipe below) or store-bought seasoning blend
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil (plus more if needed)
  • 16 ounces gnocchi (shelf-stable or refrigerated)
  • 1/2 cup basil pesto
  • Optional: grated Parmesan cheese for serving

Homemade Seasoned Salt

  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

1. Make Seasoned Salt (if using): If making your own seasoned salt, combine kosher salt, black pepper, garlic powder, and onion powder in a small bowl and stir to mix thoroughly.

2. Cook the Bacon: Place a large (12-inch) skillet over medium heat. Add the diced bacon and cook until crispy, stirring occasionally. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate to drain. Leave the rendered bacon grease in the pan.

3. Brown the Chicken: Season the chicken pieces with the homemade seasoned salt or your favorite store-bought seasoning mix and black pepper. Increase the heat to medium-high and add the chicken to the skillet with the bacon grease. Cook the chicken until it’s cooked through and browned on all sides. Remove the chicken and place it with the bacon.

4. Cook the Gnocchi: Add additional olive oil to the skillet if needed to make a total of about 2 tablespoons of fat. Add the gnocchi to the skillet, spreading it out in a single layer. Cook for 2-3 minutes, undisturbed, until the bottoms are golden brown and crispy. Stir and continue to cook for another 2-3 minutes until all sides are golden brown.

5. Combine Everything: Reduce the heat to medium-low. Stir in the pesto along with the cooked chicken and bacon. Continue to cook, stirring occasionally, until everything is heated through.

6. Serve: Divide the mixture between serving bowls. Top with grated Parmesan cheese (optional) and enjoy immediately as a satisfying dinner!

  • Gluten-free: Use gluten-free gnocchi for a gluten-free meal.
  • No waste: Save the leftover bacon grease in a jar in the refrigerator for other flavorful cooking!
  • Make it vegetarian: For a vegetarian version, omit the bacon and chicken. Sauté some vegetables like mushrooms and spinach with the gnocchi for an equally delicious dish.
