CPK California Cobb Salad Recipe

Ingredients:

Lettuce:

  • 4-5 cups chopped romaine lettuce
  • 1-2 cups chopped iceberg lettuce (optional, for crunch)

Protein:

  • 2 grilled or roasted chicken breasts, sliced or diced
  • 4-6 slices cooked bacon, crumbled

Vegetables:

  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced avocado
  • 1/4 cup thinly sliced red onion

Cheese:

  • 1/2 cup crumbled blue cheese
  • 1/4 cup grated Parmesan cheese (optional)

Eggs:

  • 2 hard-boiled eggs, quartered

Dressing:

  • Your favorite vinaigrette (balsamic or ranch work well), or try the recipe below

Homemade Vinaigrette Dressing Ingredients

  • 1/4 cup red wine vinegar
  • 2 tablespoons Dijon mustard
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2/3 cup olive oil

Instructions:

Prep the Ingredients:

  • Wash and chop the lettuce.
  • Cook and dice the chicken.
  • Cook the bacon until crispy and crumble.
  • Hard-boil the eggs, allow to cool, peel and quarter.
