CPK Baja Chicken Tacos Recipe

Ingredients:

Chicken:

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Cilantro Lime Ranch:

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Toppings:

  • 8-10 small corn tortillas
  • 1 cup shredded Monterey Jack or cheddar cheese
  • 1/2 cup shredded lettuce
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onion
  • Sliced avocado (optional)
  • Hot sauce (optional)

Instructions

  • Marinade the Chicken: In a bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Add the chicken and toss to coat well. Let marinate for at least 30 minutes or overnight in the refrigerator.
  • Make the Cilantro Lime Ranch: Combine sour cream, mayonnaise, cilantro, lime juice, garlic powder, salt, and pepper in a small bowl. Mix well and refrigerate.
  • Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook the chicken for about 5-7 minutes per side, or until cooked through and juices run clear. Let it rest for 5 minutes, then shred or dice into bite-sized pieces.
  • Warm the Tortillas: Warm the tortillas on a skillet or in the microwave until soft and pliable.
  • Assemble the Tacos: Layer tortillas with the cooked chicken, Cilantro Lime Ranch, cheese, lettuce, tomato, and onion. Add a squeeze of lime juice, avocado slices, and your favorite hot sauce, if desired.
