Ingredients
For the Chicken Shawarma
- 1 lb boneless, skinless chicken breasts or thighs, cut into thin strips
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp shawarma spice blend (see note below)
- 1 tsp paprika
- 1/2 tsp ground cumin
- 1/2 tsp turmeric
- 1/4 tsp ground coriander
- 1/4 tsp cayenne pepper (optional, for heat)
- Salt and pepper to taste
For the Garlic Sauce
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt (optional, for tanginess)
- 3-4 cloves garlic, minced
- 1 tbsp lemon juice
- 1/2 tsp dried parsley or 1 tbsp fresh chopped parsley
- Salt and pepper to taste
For the Fries
- 1 large russet potato (or amount to suit your needs)
- 1-2 tbsp olive oil
- Salt and pepper to taste
For Serving/Topping
- Chopped tomato
- Chopped cucumber
- Chopped red onion
- Chopped fresh parsley or cilantro
- Optional: Hot sauce, tahini sauce
Instructions
1. Make the Shawarma Spice Blend (if not using store-bought): Combine paprika, cumin, turmeric, coriander, cayenne pepper (if using), salt, and pepper in a small bowl.
2. Marinate the Chicken
- In a large bowl, whisk together olive oil, lemon juice, and shawarma spice blend.
- Add chicken, toss to coat well, and marinate in the refrigerator for at least 30 minutes, or preferably overnight for maximum flavor.
3. Make the Garlic Sauce
- While the chicken marinates, combine mayonnaise, Greek yogurt (if using), minced garlic, lemon juice, parsley, salt and pepper in a bowl.
- Mix well and refrigerate until ready to use.
4. Prepare the Fries
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Wash and scrub the potato. Cut into thin, even fries.
- Toss the fries with olive oil, salt, and pepper. Spread out on the prepared baking sheet in a single layer.
- Bake for 20-25 minutes, flipping fries halfway through, until golden brown and crispy.
5. Cook the Chicken
- Heat a large skillet or grill pan over medium-high heat. Add a drizzle of olive oil.
- Cook the marinated chicken in batches, until cooked through and slightly browned, about 5-7 minutes per batch.
6. Assemble the Shawarma Fries
- Place the cooked fries on a serving plate or platter.
- Top generously with the cooked chicken shawarma.
- Add dollops of the garlic sauce.
- Sprinkle with chopped tomatoes, cucumbers, red onion, and parsley or cilantro.
- If desired, drizzle with hot sauce or tahini sauce.

Notes
Shawarma Spice Blend: You can easily find pre-made shawarma spice blends, or create your own using the listed spices.
Customize It: Feel free to add your favorite toppings or sauces! Hummus and sliced olives would also be delicious.
