Cheesy Mushroom and Spinach Chicken Skillet Recipe

Ingredients:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 pound boneless, skinless chicken breasts, thinly sliced or cut into cutlets
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 8 ounces sliced mushrooms (white button or baby bella)
  • 1/2 cup chopped onion
  • 5 ounces fresh baby spinach
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese

Instructions

  • Prep the chicken: Season the chicken with salt, black pepper, garlic powder, and onion powder.
  • Cook the chicken: Heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • Sauté the vegetables: Add the mushrooms and onion to the skillet. Cook for 5-7 minutes, or until the mushrooms are softened and the onions are translucent. Add the garlic and cook for 30 seconds more, or until fragrant.
  • Wilt the spinach: Add the spinach to the skillet in batches, allowing it to wilt before adding more. Cook until all the spinach is wilted.
  • Make the sauce: Pour in the chicken broth and heavy cream. Bring to a simmer, stirring occasionally. Stir in the Parmesan cheese until melted and the sauce has thickened slightly.

Assemble and bake (optional):

  • Skillet only: Nestle the chicken back into the sauce. Top with mozzarella cheese. Cook for a few minutes until the cheese is melted and bubbly.
  • Oven finish: Preheat your oven to 400°F (200°C). Nestle the chicken into the sauce. Top with mozzarella cheese. Bake for 5-10 minutes or until cheese is melted and bubbly.

Tips:

  • Variations: Add a touch of sun-dried tomatoes for a burst of flavor, or a pinch of red pepper flakes for a bit of heat.
  • Serving: Serve over rice, pasta, or mashed potatoes. Garnish with fresh parsley for a touch of color.
  • Make-ahead: You can prepare the chicken and veggies in advance and store them in the refrigerator. Assemble and cook the skillet just before serving.
