Cheesy Everything Bagel Chicken Low Carb and Gluten Free Recipe

Ingredients

For the chicken

  • 4 boneless, skinless chicken breasts (around 1 lb total)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Everything Bagel Seasoning

  • 1 tablespoon poppy seeds
  • 1 tablespoon sesame seeds
  • 1 teaspoon dried minced garlic
  • 1 teaspoon dried minced onion
  • 1/2 teaspoon coarse salt

For the cheesy filling

  • 4 ounces cream cheese, softened
  • 2 tablespoons chopped green onions
  • 1/2 cup shredded mozzarella cheese

Instructions

1. Prep the chicken: Preheat oven to 400°F (200°C). Butterfly each chicken breast by slicing it horizontally almost all the way through, then opening it up like a book.

2. Make the seasoning: Combine all the ingredients for the Everything Bagel Seasoning in a small bowl.

3. Make the filling: In another small bowl, mix the softened cream cheese and chopped green onions.

4. Assemble: Spread a thin layer of the cream cheese mixture onto one side of each chicken breast. Sprinkle generously with the Everything Bagel Seasoning. Top with a layer of shredded mozzarella cheese.

5. Bake: Place the chicken breasts in a lightly greased baking dish. Drizzle with olive oil, season with salt and pepper. Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the cheese is melted and bubbly.

6. Serve: Enjoy immediately!

Tips

No Everything Bagel Seasoning? You can purchase pre-made blends (Trader Joe’s has a great one) or find many recipes online to make your own.

Adjust the filling: Feel free to add other flavorful ingredients to your cream cheese mixture, like chopped spinach or sun-dried tomatoes.
