- 1 teaspoon Creole seasoning

Instructions
1. Making the Cheddar Brat Meatballs
- Preheat Oven: Set oven to 400°F (200 °C). Line your baking sheet with parchment paper for easier cleanup (optional).
- Meatball Mix: In the large bowl, combine ground pork, egg, bread crumbs, salt, coriander, sage, and dry mustard. Use your hands to mix until well combined.
- Shape & Stuff: Shape the meat mixture into 1-inch meatballs. Press a cube of cheddar into the center of each, and then mold the meatball to seal the cheese inside.
- Bake: Put the meatballs on the prepared baking sheet. Bake in the oven for 15-20 minutes, or until cooked through and slightly browned.
2. Making the Dipping Sauces
- While the Meatballs Bake: In separate small bowls, combine the ingredients for your chosen sauces:
- Stadium Sauce: Mix ketchup, BBQ sauce, and yellow mustard.
- Bourbon-Dijon Sauce: Combine Dijon mustard, honey, and bourbon.
- Creole Mustard Sauce: Whisk together spicy brown mustard and Creole seasoning.
- Adjust to Taste: Give each sauce a taste and adjust the flavors as needed (more honey, more bourbon, etc.).
3. Serving
- Arrange the warm Cheddar Brat Meatballs on a platter with the dipping sauces on the side.
