Cajun Style Hash Recipe

Ingredients

  • Potatoes: 2-3 medium Russet potatoes, peeled and diced into bite-sized cubes
  • Sausage: 12 oz Andouille sausage, sliced (you can substitute with smoked sausage, kielbasa, or even chorizo)
  • Veggies: 1/2 green bell pepper, diced; 1/2 red bell pepper, diced; 1/2 medium onion, diced
  • Spices: 2 tsp Cajun seasoning (store-bought or make your own – see note below), salt, black pepper
  • Oil: 2 tbsp olive oil (or your preferred cooking oil)
  • Optional Garnishes: Chopped green onions, hot sauce, fried or poached eggs

Instructions

Prep work: Dice the potatoes, peppers, and onion. Slice your sausage.

Cook the sausage: Heat 1 tbsp of oil in a large skillet (preferably cast iron) over medium-high heat. Add the sausage and cook until browned, about 4-5 minutes. Remove the sausage with a slotted spoon and set aside.

Cook the veggies: Add the remaining tbsp of oil to the skillet. Sauté the potatoes, peppers, and onion until the onions are softened and the potatoes begin to brown, approximately 10 minutes. Stir occasionally to prevent burning and add more oil if needed.

Spice it up: Stir in the Cajun seasoning, salt, and pepper to taste.

Reintroduce the sausage: Add the browned sausage back to the skillet and stir to combine.

Get crispy: Continue cooking until the potatoes are tender and slightly crispy on the edges, about another 5-8 minutes. Adjust seasonings if necessary.

Finish and serve: Garnish with chopped green onions (optional) and serve immediately. For a complete meal, top with fried or poached eggs and a dash of your favorite hot sauce.

Notes

  • Make your own Cajun seasoning: Combine paprika, cayenne pepper, garlic powder, onion powder, black pepper, dried oregano, dried thyme, and a pinch of red pepper flakes for a custom blend.
  • Vegetarian/Vegan option: Omit the sausage and use a firm tofu “sausage” or add extra vegetables like mushrooms or zucchini for more substance.
  • Spice it to your liking: Adjust the amount of Cajun seasoning and cayenne pepper depending on your heat preference.
