Instructions
Simple & Saucy Cajun Shrimp
Prep the shrimp: Pat the shrimp dry with paper towels, then toss in a bowl with Cajun seasoning (and cayenne, if you like).
Get cooking: Heat the olive oil and butter in a large skillet over medium-high heat. Once the butter is melted and foamy, carefully add the shrimp. Cook for 2-3 minutes per side, or until pink and cooked through.
Garlic & Lemon Zest: Add the minced garlic and cook for another 30 seconds, stirring constantly. Squeeze in the lemon juice for some tanginess.
Serve it up: Remove from heat and garnish with fresh parsley or cilantro. Serve immediately over rice, pasta, or with crusty bread to soak up the sauce.
Creamy Cajun Shrimp (Optional):
Follow steps 1-2 above.
Make it creamy: After the garlic, stir in 1/2 cup heavy cream and reduce heat to low. Simmer gently for 2-3 minutes, until sauce thickens slightly.
Finish it: Add the lemon juice, then toss in the cooked shrimp just to warm through.
Extra richness (optional): Stir in 1/4 cup grated Parmesan cheese. Serve as mentioned above.
