Ingredients

Basics

  • Large flour tortillas (8-10 inches): For the best results, use fresh tortillas that are pliable.
  • Shredded cheese: Cheddar, Monterey Jack, or a Mexican blend all work great.
  • Eggs: The base for the filling.
  • Butter or oil: For cooking the quesadillas.

Optional Additions (choose your favorites)

  • Cooked protein: Crumbled sausage, diced bacon, chopped ham, chorizo
  • Vegetables: Diced bell peppers, onions, mushrooms, spinach, chopped jalapeño (for spice)
  • Seasonings: Salt, pepper, cumin, chili powder, garlic powder
  • Toppings: Salsa, sour cream, guacamole, hot sauce, fresh cilantro

Instructions

1. Prep your fillings

  • Cook any protein you’re using until done. Set aside.
  • Dice any vegetables you’d like to include.
  • Whisk the eggs in a bowl and lightly season with salt and pepper.

2. Cook the eggs

  • Heat a large skillet or nonstick pan over medium heat. Add a bit of butter or oil.
  • Pour in the whisked eggs. As they begin to set, gently scramble them until cooked through but still soft. Remove from heat.

3. Assemble the quesadillas

  • Place a tortilla in the warm skillet.
  • Sprinkle a layer of cheese over half of the tortilla.
  • Add a scoop of cooked eggs, your chosen protein, and any desired vegetables on top of the cheese.
  • Sprinkle with another layer of cheese (this helps everything stick together).
  • Fold the empty half of the tortilla over the filling.

4. Cook the quesadillas

  • Gently press down on the quesadilla with a spatula.
  • Cook for 1-2 minutes per side, or until the tortilla is golden brown and the cheese is melted.

5. Slice and serve

  • Remove from the skillet and slice into wedges with a pizza cutter or a sharp knife.
  • Serve immediately with your favorite toppings like salsa, sour cream, guacamole, and fresh cilantro.

Tips

Don’t overfill: Too much filling will make your quesadillas difficult to fold and prone to bursting.

Choose your cheese: Use a good melting cheese for optimal gooeyness.

Experiment with flavors: Try different combinations of proteins, vegetables, and spices.

Use a hot skillet: This helps create a crispy tortilla and gets the cheese melting quickly.
