- Eggs: The base for the filling.
- Butter or oil: For cooking the quesadillas.

Instructions
1. Prep your fillings
- Cook any protein you’re using until done. Set aside.
- Dice any vegetables you’d like to include.
- Whisk the eggs in a bowl and lightly season with salt and pepper.
2. Cook the eggs
- Heat a large skillet or nonstick pan over medium heat. Add a bit of butter or oil.
- Pour in the whisked eggs. As they begin to set, gently scramble them until cooked through but still soft. Remove from heat.
3. Assemble the quesadillas
- Place a tortilla in the warm skillet.
- Sprinkle a layer of cheese over half of the tortilla.
- Add a scoop of cooked eggs, your chosen protein, and any desired vegetables on top of the cheese.
- Sprinkle with another layer of cheese (this helps everything stick together).
- Fold the empty half of the tortilla over the filling.
4. Cook the quesadillas
- Gently press down on the quesadilla with a spatula.
- Cook for 1-2 minutes per side, or until the tortilla is golden brown and the cheese is melted.
5. Slice and serve
- Remove from the skillet and slice into wedges with a pizza cutter or a sharp knife.
- Serve immediately with your favorite toppings like salsa, sour cream, guacamole, and fresh cilantro.
Tips
Don’t overfill: Too much filling will make your quesadillas difficult to fold and prone to bursting.
