Blueberry Oatmeal Breakfast Bars Recipe

Ingredients:

Dry Ingredients:

  • 1 ½ cups rolled oats (old-fashioned)
  • 1 cup oat flour (or all-purpose flour, or gluten-free 1:1 baking flour)
  • ½ cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Wet Ingredients:

  • ½ cup milk (any kind)
  • ¼ cup melted butter or coconut oil (for vegan option)
  • 1/4 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract

Add-Ins:

  • 1 ½ cup fresh blueberries
  • ½ cup chopped walnuts or pecans (optional)

Instructions:

Prep:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Grease and line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides for easy removal.

Combine dry ingredients:

  • In a large bowl, whisk together the rolled oats, oat flour, brown sugar, cinnamon, baking powder, and salt.

Combine wet ingredients:

  • In a separate bowl, whisk together the milk, melted butter or coconut oil, honey, egg, and vanilla extract.

Mix batter:
