BBQ Chicken Stuffed Sweet Potatoes Recipe

Ingredients

  • Sweet potatoes: 4 medium-sized sweet potatoes
  • Chicken: 2 large boneless, skinless chicken breasts (or 1 store-bought rotisserie chicken, shredded)
  • BBQ sauce: 1 cup of your favorite BBQ sauce
  • Olive oil: 1 tablespoon
  • Seasonings: Salt and pepper to taste
  • Optional toppings: Diced red onion, Shredded cheddar cheese, Cilantro, Sour cream, Pickled jalapeños

Instructions

1. Prep the sweet potatoes

  • Preheat oven: Preheat your oven to 400°F (200°C).
  • Wash and pierce: Scrub the sweet potatoes clean and pat dry. Pierce each potato several times with a fork.
  • Bake: Place the sweet potatoes directly on the oven rack (or on a baking sheet) and bake for 45-60 minutes, or until tender when pierced with a knife.

3. Cook the chicken (if using raw)

  • Poach: In a pot, cover the chicken breasts with water or broth. Bring to a simmer, then cover and cook for about 15 minutes, or until cooked through.
  • Pan-sear: Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, or until cooked through.
  • Shred the chicken: Using two forks, shred the cooked chicken.
  • Mix with BBQ sauce: In a bowl, combine the shredded chicken with BBQ sauce.

4. Assemble the stuffed sweet potatoes

  • Slice and fluff: Slice each baked sweet potato lengthwise. Fluff up the insides slightly with a fork.
  • Fill with chicken: Generously fill each sweet potato with the BBQ chicken mixture.
  • Add toppings (optional): Sprinkle with your desired toppings like cheddar cheese, red onion, cilantro, etc.
  • Warm through (optional): If desired, place the stuffed sweet potatoes back in the oven or under the broiler for a few minutes to melt the cheese and heat everything through.
