Sweet Potato Noodles
- 2 large sweet potatoes (around 1.5 lbs total)
- 1 tablespoon olive oil
- Salt and pepper to taste
Bacon, Mushrooms, and Spinach
- 6 slices thick-cut bacon, diced
- 10 oz sliced mushrooms (white button or cremini)
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 5 oz baby spinach

Instructions
1. Prep the Sweet Potatoes
- Preheat the oven to 400°F (200°C).
- Peel sweet potatoes and use a spiralizer to create noodles. If you don’t have a spiralizer, thinly slice the potato lengthwise, then cut into thin strips.
- Toss the noodles with olive oil, salt, and pepper. Spread on a baking sheet. Roast for 15-20 minutes or until tender.
2. Cook the Bacon and Veggies
- While the noodles cook, crisp the bacon in a large skillet over medium heat. Once cooked, remove to a paper towel-lined plate. Leave about a tablespoon of bacon grease in the skillet.
- Add onion to the pan and cook until softened, about 3 minutes.
- Add mushrooms and cook until they release their liquid and start to brown (about 5-7 minutes).
- Stir in garlic and cook for 30 seconds more.
3. Assemble the Dish
- Add spinach and cook until wilted (1-2 minutes).
- Pour in broth, balsamic vinegar (if using), and thyme (if using). Toss to coat everything and cook until liquid is slightly reduced.
- Add cooked sweet potato noodles and crumbled bacon, then toss to combine.
4. Finishing Touches
- Season generously with salt and pepper.
- Serve immediately with grated Parmesan cheese and parsley if desired.

Protein: Add cooked shredded chicken, sliced sausage, or cooked shrimp for an extra protein kick.
Vegetables: Throw in other vegetables that cook quickly, like bell peppers, zucchini ribbons, or cherry tomatoes.
