Ingredients:
- Watermelon: 4-5 cups cubed, seedless watermelon
- Tequila: 1 cup silver tequila (good quality makes a difference)
- Lime Juice: 1/2 cup freshly squeezed lime juice (approximately 4-5 limes)
- Jalapeño Simple Syrup: (See below)
- Orange Liqueur (Optional): 1/4 cup (like Cointreau or Triple Sec) for extra citrusy sweetness
- Ice
- Garnishes: Jalapeño slices, lime wedges, watermelon wedges, coarse salt (optional)
Jalapeño Simple Syrup:
- Water: 1/2 cup
- Sugar: 1/2 cup
- Jalapeño: 1 medium, sliced (adjust amount for desired heat level)
Instructions:
Make the Jalapeño Simple Syrup:
- In a small saucepan, combine water, sugar, and jalapeño slices.
- Bring to a simmer over medium heat, stirring until the sugar dissolves.
- Reduce heat and simmer for 5 minutes. If you want extra spice, let it infuse longer.
- Remove from heat and let cool completely. Strain out the jalapeño slices.
Prepare the Watermelon Juice:
- In a blender, puree the watermelon until completely smooth.
- Strain the watermelon juice through a fine-mesh sieve into a pitcher, pressing with the back of a spoon to extract as much juice as possible.
Assemble the Margaritas:
- In a large pitcher, combine the watermelon juice, tequila, lime juice, orange liqueur (if using), and 2-3 tablespoons of the jalapeño simple syrup (adjust to taste – it will get a bit spicier as it sits).
- Stir very well to combine.
Salt the Rims (Optional):
- Run a lime wedge around the rim of your glasses.
- Dip the rims in coarse salt.
Serve:
- Fill your glasses with ice.
- Pour the margarita mixture over the ice.
- Garnish with jalapeño slices, lime wedges, or watermelon wedges.
Tips:
- Spice Level: Adjust the amount of jalapeño and simple syrup for your preferred spice level.
- Large Batch: Easily double or triple the recipe for a party!
- Make-Ahead: Prep the watermelon juice and simple syrup in advance and store in the refrigerator. Assemble right before serving.
