Instructions
Method 1: Traditional Infusion
- Split the bean: Carefully slice the vanilla bean lengthwise using a sharp knife.
- Scrape the seeds: Gently scrape out the sticky seeds from the inside of the pod.
- Jar the ingredients: Add the sugar, the vanilla bean seeds, and the empty pod to your airtight container.
- Seal and infuse: Seal the jar tightly and store in a cool, dark place for at least 2-3 weeks. The longer you infuse, the stronger the vanilla flavor will be. Shake the jar occasionally.
- Replenish: As you use the vanilla sugar, you can add fresh sugar to the jar and continue to use the spent vanilla pod for further infusion.
Method 2: Quick and Fine
- Split and scrape: Repeat steps 1 & 2 from the traditional method.
- Process: Combine sugar and vanilla bean seeds in a food processor or spice grinder. Pulse until the vanilla bean is finely ground and distributed evenly throughout the sugar.
- Store: Pour the vanilla sugar into your airtight jar. It’s ready to use immediately!
Tips:
- Quality bean = Quality sugar: For the best flavor, use high-quality, plump vanilla beans.
- Experiment: You can adjust the ratio of vanilla beans to sugar for a stronger or milder intensity.
- Avoid brown sugar (usually): Granulated sugar gives the most neutral base for the vanilla flavor to shine through. Brown sugar can work, but its molasses notes might be a bit strong.
