Ingredients
For the Steak
- 1 lb flank or skirt steak
- 1/4 cup olive oil
- 1 tablespoon Worcestershire sauce
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
For the Chipotle Cherry Salsa
- 1 cup fresh cherries, pitted and halved
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 chipotle pepper in adobo sauce, minced
- 1 tablespoon lime juice
- 1 teaspoon honey
- Salt and black pepper to taste
For the Tacos and Toppings
- 12 small corn tortillas
- 1/2 cup crumbled queso fresco or Cotija cheese
- 1/2 cup shredded red cabbage
- Avocado slices, for garnish (optional)
- Sour cream, for garnish (optional)
Instructions
1. Make the Marinade
- In a small bowl, whisk together olive oil, Worcestershire sauce, lime juice, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
2. Marinate the Steak
- Place the steak in a shallow dish or resealable bag. Pour the marinade over the steak, turning to coat evenly.
- Cover the dish or seal the bag and refrigerate for at least 30 minutes or up to overnight for maximum flavor.
3. Make the Chipotle Cherry Salsa
- While the steak marinates, combine the cherries, red onion, cilantro, chipotle pepper, lime juice, honey, salt, and pepper in a medium bowl. Stir gently to combine.
- Cover and refrigerate until ready to serve.
4. Cook the Steak
- Preheat a grill or grill pan over medium-high heat.
- Remove the steak from the marinade and pat dry with paper towels.
- Grill the steak for 4-5 minutes per side for medium-rare, or until it reaches your desired level of doneness.
- Let the steak rest for 5-10 minutes before slicing thinly against the grain.
5. Assemble the Tacos
- Warm the corn tortillas over a gas flame, in a skillet, or in the microwave until soft and pliable.
- Place sliced steak in the center of each warmed tortilla.
- Top with the chipotle cherry salsa, crumbled cheese, shredded cabbage, and any other desired toppings like avocado slices or sour cream.
Tips
Customize the Spice: Adjust the amount of chipotle pepper in the salsa to control the level of heat.
Don’t Overcook the Steak: Flank and skirt steak are best cooked quickly to medium-rare or medium for the most tender results. For a more well-done steak, cook longer but be aware it may be less tender.
