Ingredients
For the chicken
- 1.5 lbs boneless, skinless chicken breasts (trimmed of excess fat)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
For the spinach artichoke dip
- 10 ounces frozen chopped spinach, thawed and squeezed dry
- 1 (14 ounce) can artichoke hearts, drained and roughly chopped
- 8 ounces cream cheese, softened
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 3 cloves garlic, minced
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper

Instructions
1. Preheat the oven
- Preheat your oven to 400 degrees F (200 degrees C). Grease your baking dish lightly.
2. Prepare the chicken
- Pat the chicken breasts dry with paper towels.
- Season both sides of the chicken with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken and cook about 5-6 minutes per side, or until browned and cooked through (internal temperature reaches 165 degrees F).
- Remove chicken from skillet and let cool slightly before shredding or cutting into bite-sized pieces.
3. Make the spinach artichoke dip
- In a medium bowl, combine the thawed and squeezed spinach, chopped artichoke hearts, softened cream cheese, mayonnaise, sour cream, Parmesan cheese, mozzarella cheese, minced garlic, onion powder, salt, and pepper.
- Mix until everything is well combined and creamy.
4. Assemble the dish
- Spread half of the spinach artichoke dip mixture in the bottom of the prepared baking dish.
- Place the shredded or chopped chicken pieces on top of the dip layer.
- Spread the remaining spinach artichoke dip on top of the chicken.
5. Bake
- Bake in the preheated oven for 20-25 minutes, or until the dip is hot and bubbly and the cheese is lightly browned.
6. Serve
Let cool for a few minutes before serving. Enjoy with your favorite dipping options like:
