Ingredients
- 6 tablespoons unsalted butter
- 1 (10-ounce) bag of mini marshmallows + 1 cup for topping
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon salt
- 6 cups crispy rice cereal
- 2 cups graham cracker pieces (roughly crushed)
- 1 cup semisweet or milk chocolate chips
- Additional graham crackers and chocolate bars for garnish (optional)
Equipment
- Large saucepan or pot
- 9×13 inch baking dish
- Spatula
- Nonstick cooking spray
Instructions
1. Prep the pan: Grease the 9×13-inch baking dish generously with nonstick cooking spray.
2. Melt and mix: Melt butter in the large saucepan over low heat. Add the 10-ounce bag of marshmallows and stir constantly until they’re completely melted and smooth.
3. Add flavor: Remove the pot from the heat and stir in the vanilla extract and salt.
4. The crispy part: Add the rice cereal and graham cracker pieces to the marshmallow mixture. Stir until everything is well combined and evenly coated.
5. Layer one: Press half of the mixture into the prepared baking dish, forming an even layer.
6. Chocolate time: Sprinkle the chocolate chips over the top of the rice krispie layer.
7. Layer two: Gently spoon the rest of the rice krispie mixture over the chocolate chips, spreading it into an even layer.
8. Marshmallow topping: Top with the remaining 1 cup of mini marshmallows. For a fun twist, consider toasting these marshmallows quickly under the broiler for a browned, campfire-like effect.
9. Optional garnish: Break up graham crackers and chocolate bars to sprinkle over the top.
10. Cool and cut: Let the treats cool completely at room temperature before cutting into squares.
Tips
Fresh marshmallows: Using fresh marshmallows will result in the best melty goodness.
Don’t overcook: Keep a close eye on the marshmallows as they melt to prevent them from getting hard or burning.
Press gently: Press the mixture into the pan lightly to keep the treats soft and chewy.
Flavor variations: Get creative! Add peanut butter chips, butterscotch chips, chopped nuts, or try using different kinds of graham crackers (cinnamon, chocolate, etc.).
