Ingredients
Graham Cracker Layer
- 1 box (about 14.4 oz) honey graham crackers (approximately 30-36 full sheets)
Chocolate Ganache
- 1 cup heavy cream
- 12 ounces semi-sweet chocolate chips (or milk chocolate if you prefer)
Marshmallow Whipped Cream
- 2 cups heavy cream
- 1 (7-ounce) jar marshmallow fluff (creme)
Garnish (Optional)
- Mini marshmallows
- Chocolate pieces or shavings
- Graham cracker crumbs
Equipment
- 9×5 inch loaf pan
- Medium saucepan
- Large mixing bowl
- Whisk or hand mixer
- Rubber spatula
Instructions
Prepare the Pan: Line your loaf pan with plastic wrap, leaving some overhang on the sides for easy removal of the cake.
1. Make the Chocolate Ganache
- Heat the heavy cream in a medium saucepan over medium heat until it just begins to simmer.
- Remove the pan from the heat and stir in the chocolate chips. Let stand for a minute to melt, then whisk until smooth and glossy.
- Allow the ganache to cool slightly before using.
2. Make the Marshmallow Whipped Cream
- In a large bowl, beat the heavy cream with a whisk or hand mixer until stiff peaks form.
- Gently fold in the marshmallow fluff until well combined.
3. Assemble the Icebox Cake
- Place a single layer of graham crackers in the bottom of the prepared loaf pan, breaking crackers as needed to fit.
- Spread half of the marshmallow whipped cream over the graham crackers.
- Drizzle about 1/3 of the cooled chocolate ganache over the marshmallow layer.
- Repeat with another layer of graham crackers, the remaining marshmallow cream, and another drizzle of chocolate ganache.
- Finish with a final layer of graham crackers.
4. Chill
- Cover the pan tightly with plastic wrap and place in the refrigerator for at least 4 hours, but ideally overnight. This allows the graham crackers to soften and the flavors to meld.
5. Serve
- When ready to serve, use the plastic wrap overhang to lift the cake out of the pan.
- Garnish with mini marshmallows, graham cracker crumbs, and chocolate shavings or pieces, if desired.
- Slice and enjoy!
Tips
Toast the marshmallows: For an extra s’mores flavor, toast some mini marshmallows under the broiler for a few seconds before garnishing.
Make it your own: Add a touch of peanut butter to the whipped cream or substitute some of the graham crackers with chocolate graham crackers.
Storage: Store leftover cake covered in the refrigerator for up to 3 days.
