Yields: 4-6 servings
Prep Time: 10 minutes
Ingredients
- 1 (15oz) can of store-bought hummus (plain or roasted garlic flavors work well)
- 1/2 cup diced tomatoes (Roma tomatoes are ideal for less liquid)
- 1 tablespoon chopped fresh basil
- 3/4 tablespoon extra virgin olive oil
- 3/4 tablespoon balsamic vinegar
- 1 small clove garlic, minced or grated
- Salt and freshly ground black pepper to taste
Equipment and Utensils
- Medium bowl
- Spoon for stirring
Instructions
1. Prepare the tomatoes: Rinse and dice your tomatoes into small pieces. If you want a less seedy bruschetta topping, you can scoop out and discard the seeds.
2. Combine the topping: In a medium bowl, mix the diced tomatoes, fresh basil, olive oil, balsamic vinegar, and minced garlic. Season generously with salt and pepper.
3. Assemble the hummus: Open your container of hummus and spread it into a serving bowl or wide, shallow dish. Use a spoon to create a slight well or indentation in the center of the hummus.
4. Add the topping: Spoon the bruschetta topping mixture into the center of your hummus.
5. Serve
Serve immediately with your choice of the following:
- Pita bread (toasted or untoasted)
- Crackers
- Sliced vegetables like carrot sticks or cucumber rounds
Tips
Make it ahead: You can prepare the bruschetta topping up to a few hours in advance and store it covered in the refrigerator. Bring to room temperature before topping your hummus.
Adjust flavors: Add a pinch of red pepper flakes for spice or a sprinkle of parmesan cheese just before serving.
Hummus options: Any variety of hummus would work, experiment with different flavors to find your favorite!
