Ingredients:
For the beef and marinade:
- 1 lb flank steak (or other thinly sliceable beef like sirloin) sliced thinly against the grain
- 1 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tsp sesame oil
- 1/2 tsp black pepper
For the sauce:
- 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp brown sugar
- 1 tbsp rice vinegar (or white wine vinegar)
- 1 tsp sesame oil
- 1 tbsp cornstarch
- 1/2 cup beef broth (or water)
For the stir fry:
- 2 tbsp neutral-tasting cooking oil (vegetable, canola, etc.)
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1-inch piece of ginger, peeled and minced
- 1 head of broccoli, cut into florets
- 1/2 cup water
- 12 oz dried egg noodles (or your favorite type of noodle)
Optional garnishes:
- Toasted sesame seeds
- Sliced green onions
Instructions
Prep and marinate:
- Thinly slice your beef against the grain.
- Combine beef, soy sauce, cornstarch, sesame oil, and black pepper in a bowl. Mix well and set aside for at least 10 minutes.
Make the sauce:
- Combine soy sauce, oyster sauce, brown sugar, rice vinegar, sesame oil, cornstarch, and beef broth in a small bowl and whisk until cornstarch is dissolved.
Cook the noodles:
- Follow your noodle package instructions for al dente texture (slightly undercooked). Drain and rinse with cold water to stop the cooking process. Set aside.
Blanch the broccoli:
- Boil a pot of water, add broccoli and cook for 1 minute. Remove and drain immediately. Set aside.
Cook it all together:
- Heat a large skillet or wok over high heat with 1 tbsp of oil. Add beef and cook, undisturbed, for 30 seconds. Then stir-fry until mostly cooked through, about 2 minutes. Transfer beef to a plate.
- Add the remaining tbsp of oil to the pan. Add onion, garlic, and ginger. Cook for 30 seconds, until fragrant.
- Add broccoli and 1/2 cup water. Cover and steam for 1 minute.
- Push the vegetables to the sides of the pan and pour the sauce mixture into the center. Bring to a simmer, stirring, until it thickens slightly.
- Return beef to the pan, add noodles, and stir-fry everything together for 1-2 minutes until heated through and sauce coats everything evenly.
Serve:
- Garnish with sesame seeds and green onions, if desired. Enjoy!
Tips
- Customize it: Add other veggies like bell peppers or carrots. Substitute or add other proteins like chicken or tofu.
- Spice it up: Add a pinch of red pepper flakes for a kick of heat.
- Make it ahead: Prep your beef, sauce, and vegetables in advance. Cook everything together just before serving.
