Ingredients:
For the filling:
- 1 pound ground pork (or substitute ground chicken/turkey)
- 1/4 cup finely chopped green onions (scallions)
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon sesame oil
- 1/4 teaspoon white pepper
- Pinch of red pepper flakes (optional, for heat)
For the sauce:
- 1/3 cup soy sauce (or tamari for gluten-free)
- 1/4 cup chicken broth (or vegetable broth)
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon red pepper flakes (optional)
For the bowls:
- 8-10 ounces rice noodles (or your preferred noodles)
- 1 tablespoon neutral-flavored cooking oil
- 1 (14 ounce) bag coleslaw mix (or freshly shredded cabbage)
- 3 cloves garlic, minced
- Green onions, thinly sliced, for garnish
Instructions
- Make the filling: In a bowl, combine ground pork, green onions, soy sauce, rice vinegar, ginger, sesame oil, white pepper, and optional red pepper flakes. Mix thoroughly with your hands.
- Prepare the sauce: In a separate bowl, whisk together soy sauce, chicken broth, rice vinegar, sesame oil, ginger, and optional red pepper flakes.
- Cook the noodles: Follow the package directions, aiming for al dente noodles. Drain and rinse with cold water to stop the cooking process. Set aside.
- Cook the filling: Heat the cooking oil in a large skillet or wok over medium-high heat. Add the ground pork mixture and cook, breaking it up with a spatula, until browned and cooked through.
- Add the vegetables: Stir in the coleslaw mix and garlic. Cook, stirring frequently, for 3-5 minutes, or until the cabbage is slightly softened.
- Assemble the bowls: Add the cooked noodles to the skillet or wok with the pork and vegetables. Pour the sauce over everything and toss to coat evenly. Cook for an additional 1-2 minutes, or until heated through.
- Serve: Divide the mixture among bowls and garnish with sliced green onions. Enjoy immediately!
Tips and Customization
- Vegetarian option: Replace the ground pork with crumbled firm tofu or your favorite plant-based ground meat alternative.
- Extra vegetables: Feel free to add other vegetables like shredded carrots, chopped broccoli florets, or bell peppers.
- Spice it up: Increase the red pepper flakes or add a drizzle of sriracha sauce for extra heat.
- Fresh herbs: Finish the dish with chopped cilantro or basil for added freshness.
